Champion is quite a cold hardy & with some protection, plants will survive the winter & provide early spring baby greens & collard raab (flowering stalks). Sometimes collards will become perennial if flowering stalks are removed from plants in spring or early summer Collards develop sweetness as the weather turns cooler in autumn. Highly nutritious. Prepare collards like kale—harvest younger, tenderer leaves, remove stems and chop small. Collard is closely related to Kale.
